Best Banana Chocolate Chip Bread

OMG, this banana bread is so good that it can make people like me, who generally dislike any type of dessert with banana, fall head over heels in big fat love with it. It really is the best use for overripe bananas, with the exception of my bad-ass fruit fly trap, but that’s another story… The recipe is adapted from one of my favorite websites,, and I made a few additions to make it the best banana chocolate chip bread. Ever.

An amazing banana bread topped with ghirardelli chocolate chips.
  • 3 ripe bananas
  • 1/4 cup melted butter (you can add a bit more for more decadence)
  • 1 cup coconut sugar (you can use white too, same amount)
  • 1 egg, beaten
  • 2 teaspoons vanilla
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 1/2 cups gluten free flour (you can use regular if you don’t want to go gluten free….)
  • 1/4 cup – 1/2 cup miniature chocolate chips.
  1. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4×8 inch loaf pan. Sprinkle the top with chocolate chips. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
